What you need
- 2 oz Dry Shot Original Spirit
- ¾ oz fresh lemon juice
- ½ oz simple syrup
- ½ oz aquafaba (liquid from a can of unseasoned chickpeas)
- Pinch of freshly cracked white pepper
- Ice
- Expressed lemon peel and cracked white pepper to garnish
How to make it
- Add all ingredients except ice to a shaker. Dry shake — no ice — for 15 seconds. This builds the foam.
- Add ice and shake again for 10 more seconds.
- Double strain into a coupe. No ice.
- Let the foam settle for 20 seconds.
- Express a strip of lemon peel over the top and drop it in. Add a small pinch of cracked white pepper over the foam.
Note: Don't skip the dry shake. That's the whole texture.
