What you need

  • 2 oz Dry Shot Spiced Vanilla Spirit
  • 1 tablespoon raw honey
  • ½ oz fresh lemon juice
  • 2 thin slices fresh ginger
  • 6 oz very hot water (just off the boil)
  • 1 cinnamon stick
  • Lemon wheel and star anise to garnish

How to make it

  1. Warm your mug by filling it with hot water. Empty it.
  2. Add the honey and a small splash of hot water. Stir until dissolved.
  3. Add the ginger slices and press them once with a spoon.
  4. Add the spirit and lemon juice.
  5. Top with the remaining hot water. Stir gently.
  6. Lay a lemon wheel on the surface. Rest the cinnamon stick against the rim. Float the star anise on top.

Note: Add the spirit after the honey dissolves — not to boiling water. The top notes of the vanilla disappear at boiling temperature.
